Gilberth first heard of the Church in 1840, and he and his wife were baptized in 1842 in Illinois. His father ran a ferry across the Green River in North Carolina. Soon after the death of Gilberth's father, his mother moved the family to Illinois.

After Gilberth's marriage, they lived on a ranch near Zenia, Illinois, where he raised sheep and some cattle and farmed. They remained there until after the martyrdom, then they started west with the saints. They stayed in Mt. Pisgah for the winter. In the spring of 1848, they went on to Council Bluffs and Winter Quarters, joining with Lorenzo Snow's company for the trip west.

Upon their arrival in the Valley, Gilberth bought a small adobe house where they lived through the winter. In the spring of 1849, he and his family became one of the first families to settle in Provo, where he helped build a fort. They and their 14 sons and daughters were active in laying the foundation of Provo City.

They were active in the church and several of their sons went on missions. They fought in the Indian wars, and trapped wild animals, which were plentiful, for their own use and the sale of the hides. Gilbreath made their shoes and Hannah made their clothes.

He was active in the community, serving on the city council and as a selectman. He served in many positions in the church until his death.
